Kitchen Knife #2 - From Sweden, Isasmedjan

Man, I enjoy this knife A LOT! I love everything about it, the profile, the wrought iron clad, the Kurochi finish, the maker's mark, the fit and finish, the handle, the length and the weight, literally everything about it is perfect for me, and nothing, I mean absolutely NOTHING about this knife gives off lazy vibe, even the smallest detail is perfect, it's a very dedicated made art piece by Jonas.


The knife comes with this flat ish profile that makes push chopping veggies very enjoyable. I am a nakiri enthusiast because I prefer the flatter profile for push chopping, and the taller profiles from nakiri for knuckle clearance(my hand isn't that big but I like to feel safe)

Anyways, this profile makes the tip work very nakiri like, it eliminated the frustration of certain ingredients not being cut by the regular gyuto tip when you push chop.

And the knife still comes with the sharp tip that tells people "hey I am still a knife! Not a rectangle shaped sharp thing."


The steel is called 26c3 from Sweden, according to the maker this is a special steel for him so I picked it, HRC is around 64. I've put an edge on the knife with the progression of Natsuya and Aizu, the sharpening feedback is very positive, and I could definitely feel the Aizu leaving an aggressive edge on it!


The knife weights in at 185g, it's actually around the perfect weight for me and the balance point is right at the maker's mark, perfect for pinch grip!


During one of the chats with the knife maker Jonas, he gave me an option of not engraving the runes on the other side of the blade, I told him if I was to get a honyaki I will probably not get the runes because they give off more rustic vibe.

I ended up getting the runes engraved, however, I think that's something quite remarkable for him to do as a maker because he respects the end user's decision, despite this is a symbolic element for the brand!

Being as annoying as I am, I had couple minor adjustments I wanted to change and both times he addressed them with no issues or extra charge.

I highly recommend Jonas if you are thinking to get your custom made style knife(or knives), he's extremely dedicated, goes above and beyond to meet your expectations and a very nice human being.
